From The DIVA'S Kitchen: Green Beans With Smoked Turkey
I’m a vegetable fan. And there’s nothing like a pot of tender green beans to make any main dish special!! Not sure how to make them mouth-wateringly delicious and not over cooked?? These helpful hints will help you make beans everyone will want seconds of!!
1) Don't cook them in water!!! Try low-sodium chicken broth instead - it imparts amazing flavor. Use 1 1/2 cups of broth per pound of beans.
2) Gone are the days of using salt-laden fatback, ham hocks and other pork "pieces". A more flavorful alternative is smoked turkey. Purchase either drumsticks or wings, place them in a pot filled with enough chicken stock/broth to cover, making sure to add in 2 finely minced garlic cloves, plenty of fresh pepper and approximately 1 cup of diced sweet onions. Bring the meat to a rolling boil, then reduce to simmer until the turkey starts to pull away from the bone.
3) Remove the turkey parts to a cutting board and pull off the skin (which you'll discard) and meat, dicing it into small pieces.
4) To the pot, add in green beans and the chopped meat, bring to a quick boil - then simmer until beans are tender (approximately 15 minutes). Cooking them longer than 15 minutes will give you a mushy, unappetizing dish!!
5) Serve in a warmed bowl, making sure that you've distributed the smoked turkey meat evenly.
