Giving Thanks: Potato Salad Do's & Don'ts...


Potato Salad! One of my favorite dishes to make and a great "side" for tomorrow's big feast! There's a couple of secrets to making awesomely tasty potato salad....wanna hear 'em? Here we go!

1) Use small potatoes - the baby or fingerling versions. They are easier to cook, easier to dice and very tender.

2) Don't overcook the potatoes. You want them to be tender, not mushy (as if you were making the mashed version).

3) Salt the water carefully. You'll still be adding seasonings to the dressing mix.

4) And speaking of dressing - use QUALITY mayonnaise. I am a big fan of Hellman's, but Duke's is a good brand also.

5) Chop and dice the other salad ingredients while the potatoes are cooking. You want a fine to medium dice...too chunky and it will overwhelm the potatoes.

6) Keep the seasoning simple: Salt, fresh ground pepper, garlic powder and celery seed. Mix it into the mayonnaise FIRST, then add the drained and cooled potatoes.

7) For an extra "flourish", crumble some crisp bacon along with a few thinly sliced scallions on top for color and garnish.
