From The DIVA'S Kitchen: Roasted Asparagus


Roasted Asparagus with Parmesan

1 pound of fresh asparagus
2 tablespoons of olive oil
½ teaspoon of Season-All
½ teaspoon of garlic powder
½ teaspoon of ground black pepper
½ teaspoon of dried oregano
3 tablespoons of shredded Parmesan cheese


Pre-heat oven to 425 degrees.

Spray a 15x10x1 inch baking sheet or pan with non-stick coating

Wash asparagus thoroughly and cut off tough ends of the stalk.

In a shallow bowl, blend together the oil and seasonings, toss in asparagus and coat evenly on all sides. Spread in a single layer in baking pan.

Roast 10 minutes, remove from oven and sprinkle with cheese, toss again to coat evenly.

Return asparagus to oven and roast uncovered for another 5-8 minutes or until vegetables are crisp-tender.
